Casimir 2016 Single Cask 21 Month Old Clairin Ansyen / Kirsch Whisky
Part of a series of releases from Velier, the darling of the Rum world, highlighting the fantastic terroir focused rums of Haiti, known by locals and insiders as clarin. Each is the product of a single distiller and exclusively from pure juice - in the style of agricole - from cane grown in the villages adjoining fields.
This example, Clarin Casimir, was produced in the coastal village of Barraderes by Faubert Casimir in 2015 from the indigenous Hawaii sugar cane varietal. Wild anise, ginger and citronella are added to the juice which is then wild fermented using the ambient yeasts of the village before distilation in a pot still.
This 21 month aged single cask was barrelled in June 2016 in an ex-Caroni rum cask, and bottled in March 2018. It was selected by Stefan Marzoll and Christoph Henkel of Kirsch Whisky in Germany.
