Enmore 1991 The Wild Parrot Continental Ageing
A demerara rum distilled on the wooden coffey still at Enmore distillery in 1991.
The Enmore distillery closed in 1993, with its wooden coffey still and the Versailles single wooden pot still moved first to Uitvlugt and then to Diamond in 2000, where its styles are still produced today.
This is a bottling from The Wild Parrot, a collaboration between Hidden Spirits and Stefano Ceremschi. This single cask was aged in Europe, allowing for slower maturation.
