Chamarel Gold Rum
Chamarel distillery on the Indian Ocean island of Mauritius is a single estate distillery, one of the few in the world still to cultivate its own sugarcane. It was established in 2008 and produces both white rum on a Barbet copper column still, as well as a double distilled rum, produced akin to cognac on two 20HL copper pot stills. The distillate is rested for 6 months in stainless steel, before the ageing stock is warehoused in American and French oak casks, often followed by an interesting selection of experimental wood finishes.
