Sajous 2016 Single ex-Caroni Cask 19 Month Old Clairin Ansyen / Andrea Attanasio
Clairin is considered the national spirit of Haiti, and is an eaux-de-vie produced similarly to agricole rum, generally by a single local distiller using sugarcane from their village’s and adjoining fields. Largely secreted from the world for nearly 200 years, clairin was introduced to the world by Italian distributors, Velier, after Luca Gargano and Daniele Biondi discovered these distillers on at trip to Haiti in 2012.
The Chelo distillery was built by Michel Sajous in the Saint Michel de l'Attalaye region, just north of the Haitian capital of Port-au-Prince. There he operates a small traditional pot still fitted with a six-plate column still neck. The 1000 litre boiler is direct fired using bagasse, and the spirit is bottled at its still strength of 50-52% ABV.
This 19 month aged single cask was barrelled in June 2016 in an ex-Caroni rum cask, and bottled in January 2018. It was selected by Andrea Attanasio.
