Bimber is a distillery located in the Park Royal area of north-west London, independently-owned by Dariusz Plazewski and Ewelina Chruszczyk. The distillery is primarily a single malt whisky producer, however it has also produced pot- and column-distilled rum and other spirits.

The Bimber brand was introduced early in the distillery's life through the release of early samples of its new make spirit, followed by the debut of its English barley vodka in 2017 and its rum in 2018. Its inaugural London single malt release was then launched in September 2019.

The brand's London Rum is distilled from a molasses wash, bottled unaged and is released in small batches.
