The Douglas Casimir distillery was established by Duncan Casimir in 1979 and continued by his son, Faubert. It operates within the clairin cottage industry in Haiti and is considered the finest distiller in the Barradères region. A unique quirk of the distillery is its addition of herbs or vegetable matter to pure cane juice during fermentation to enhance the final spirit’s aroma. These include citronella, cinnamon and occasionally ginger, and distillation takes place in a pot still using Hawaii Blanche and Hawaii Rouge cane.
As with all clairin, most of Douglas Casimir's output is sold in the local market, however it is also one of the five producers in The Spirit of Haiti portfolio from La Maison & Velier.
