Ninefold is a Scottish rum distillery located within the Dormont Home Farm estate in Dumfries & Galloway. The idea for the distillery was conceived by Kit Carruthers in 2016, who founded Dormont Distilling Ltd the following year and began construction of the distillery in 2018. Located within two of the farm's former cattle byres, the stillhouse produced its first spirit in Spring 2019.
With the exception of its yeast and molasses which it needs to import, the remaining production process is entirely carried out on-site. The distillery operates a hybrid copper pot still, which it uses to produce a range of aged and unaged pure single rums.
The Ninefold brand was launched in 2019 with the introduction of its unaged pure single rum. This remained the distillery's sole output until early 2021 when it introduced a spiced rum to its portfolio, produced by flavouring its pot-distilled rum with allspice, nutmeg and anise.
The distillery also offers its aged rum as single cask offerings, all of which are fully matured on-site. Its cask types are varied and include virgin American oak, ex-bourbon, ex-Scotch whisky, and some specially-coopered barrels produced using beech wood from Dormont Home Farm.
