History of use

The use of casks made from any wood other than oak is generally a rarity in the rum industry, largely due to the regulations placed on it by the majority of its most prominent producing nations. For examples, Cuba, Venezuela, Martinique, Guadeloupe and Jamaica all insist on the use of ageing rum exclusively in containers made from oak.

Not all distillers and bottlers are subject to such tight regulation however, and many will permit cask types made from other types of wood. Demerara rum, for example, is permitted to be aged in other cask types where required, as are many others. However, with the majority of rum today aged in used American and French oak from the bourbon and brandy industries, non-oak containers feature mostly in experimentation rather than as a cornerstone of any particular wood policies.

Just as not all oak is suitable for coopering, so too are many alternative species of wood unusable as rum barrels. Of those that have successfully been trialled however are acacia, cherry, chestnut and maple.
