Opened in 1956, the Destilería la Galarza is the the oldest operating rum distillery in the Bacardi Limited portfolio. Despite this, the Mexican distillery is the secondary operation and is tasked primarily with supporting production at its main facility in Puerto Rico.

The distillery was notably the producer of the Bacardi brand's 1909 Heritage Limited Edition, released in 2010 to mark the centenary of the famous Daiquiri cocktail.
