Pure Single Rum

Lord Byron is an Australian craft spirits distillery located in Byron Bay on the west coast. It was founded in 2017 by Brian and Helen Restall, both of whom were members of the Australian Distilling Association and were trained and mentored by Tasmanian whisky pioneer, Bill Lark.

The distillery operates two copper alembic pot stills and a stainless steel column still, producing both aged and unaged rums. Its other output includes gin, vodka and a handful of liqueurs.

The first Lord Byron rums to be released were its unaged spirit, double-distilled from local molasses, first on its copper pot still and then on stainless steel column still. Interestingly, these releases were originally labelled as Silver Rhum due to Australian law requiring all rum to be cask-aged for at least one year. They have since been rebranded as Silver Cane. In 2018 the distillery also started to market sourced rum from Central America which it called The Promise, claiming it to be a reflection of the style of aged rum it would produce in the future.

The first aged rum release to be produced at the distillery was launched in 2021. Labelled Pure Single Rum in accordance with the Gargano classification, the expressions are double-distilled in its pot stills and aged 3 years with finishing periods in either wine or bourbon casks. The Lord Byron range is rounded out by its overproof Fire Can OP white rum, a falernum liqueur, several gin and bottles of tawny that are aged in its used rum casks.
