Depaz is a rum distillery on Martinque, situated on an estate established in 1651 by Jacques Duparquet, the first governor of the island. The original distillery was destroyed by the 1902 volcanic eruption of Mount Pelée, and the current facility was rebuilt by Victor Depaz in 1917. Now considerably modernised, it is part of the holdings of COFEPP through its subsidiary, Bardinet SAS.
The distillery produced Martinique's AOC-certified style of rhum agricole, which is bottled as both the Depaz and Dillon brands.
